Rhubarb is technically a vegetable, at least in the botanical sense, but a court in New York decided to name it a fruit in 1947. The main reason behind this was to reduce the duties and taxes paid on it. The plant has long fleshy edible stems and big leaves which are toxic and should not be eaten. It also has small red, greenish white or white flowers.
The stalks might be light pink, green, bright red or a mixture of these colors. They have a similar crisp texture to celery and they have a tart, almost bitter flavor if you eat them raw. They are usually cooked to make savory pies and dishes or mashed with sugar for sweet rhubarb recipes like a rhubarb crisp recipe or rhubarb cake recipes.
This plant is grown in a lot of different regions and, because it can be grown in greenhouses, it is available during most of the year. Sometimes it is grown in hothouses (these are heated greenhouses). Hothouse rhubarb is available during the early spring. This is before the outdoor cultivated version is ready. When you grow rhubarb in hothouses, it is sweeter, more tender and a brighter shade of red than cultivated rhubarb.
This plant is grown in containers or in the ground. It happily grows at any time when planted somewhere with a warmer climate but does not fare well in cooler ones. The part of the plant which is above the ground will shrivel up and die when the temperature drops below freezing. When the weather becomes warmer again, the plant recommences growth from the roots. Putting an upturned bucket over the new rhubarb seedlings can help to raise the temperature a few degrees.
Rhubarb is frequently chopped into one inch pieces and added to boiling water. You do not need to use a lot of water because rhubarb already contains a lot. You will also need between half a cup and three quarters of a cup of sugar per pound of rhubarb. Nutmeg, cinnamon, lemon juice or lime juice are optional additions to boiled rhubarb recipes.
Another way to make this is to simmer the rhubarb slowly without adding any water. It will cook in its own juices. You could perhaps use your crockpot for such a recipe.
When it is soft, it is ready to use in your rhubarb cake recipes or rhubarb pie. Rhubarb can also boiled with apples, ginger, or strawberries, to add sweetness, and then made into a jam or jelly. You can choose from other types of fruit too, since pretty much anything goes with the rhubarb flavor, to make your own unique rhubarb jam recipes.
You will probably have to add some pectin to firm the mixture up a bit. Try apricots, plums, apples, raspberries or strawberries, using one part rhubarb to two parts other fruit.
Rhubarb sauce is another idea and you can simmer rhubarb with fruit and other ingredients for up to an hour. This cold sauce is nice served alongside meat, or you can use it as a pie filling or to make rhubarb crumble.
Rhubarb can also be used to make fruit wine. In Iceland, Norway and a few other countries, raw rhubarb dipped in sugar is a popular and affordable treat for kids. The sugar is necessary because raw rhubarb tends to be very sour, especially to kids! This delicious ingredient can be used to make various sweet or savory rhubarb recipes and you can have a lot of fun cooking with it.

Rhubarb crumble is an incredibly popular dish and you can serve it with vanilla ice cream or whipped cream for spectacular results. Adults and kids alike enjoy this dish because it has a very special taste. If you are new to dessert-making, this would actually be a good one to cook because it is very simple and there is nothing really that can go wrong. You can even see when the rhubarb crumble is ready because the crumble mixture on top will be golden brown and you will be able to see the filling bubbling away underneath it.
This dessert is made in two parts. First you have the sweetened rhubarb mixture, which is spiced with vanilla and cardamom. Not all rhubarb crumble recipes feature cardamom but it does add a nice flavor. Some recipes also feature a second fruit, such as blackberries or apple. Again, that is up to you, but rhubarb has plenty of flavor already. On top of that you have the crumble mixture, which is a simple combination of brown sugar, flour, and butter, with a little salt for a nice flavor balance.
It is probably quicker to make the crumble in your food processor but if you do not have one, you can stir the dry ingredients together and use a pastry cutter or pair of knives to cut in the butter. This is how rhubarb crumble was made in the old days after all, and this dish was popular long before food processors were invented!
Ingredients -
2 lbs rhubarb in 1 inch pieces
¼ cup all-purpose flour
1 ¼ cups white sugar
¼ teaspoon ground cardamom
1 teaspoon vanilla extract
Vanilla ice cream, to serve
For the Topping:
1 cup light brown sugar
1 cup all-purpose flour
4 oz butter
½ teaspoon salt
Preparation:
Preheat the oven to 375 degrees F.
Stir the white sugar, rhubarb, vanilla, and cardamom with ¼ cup of the flour.
Transfer this mixture into a 13 x 9 inch baking dish.
Pulse the remaining flour with the brown sugar and salt in a food processor.
Chop the butter into cubes and add them. Pulse the mixture again until the butter pieces are pea-sized.
Spread this crumble topping over the rhubarb mixture in the baking dish.
Cook for about 40 minutes or until the topping is golden brown and the filling is bubbly.
Let the rhubarb crumble cool for 30 minutes, then serve it warm with vanilla ice cream.
